It’s the start of the holiday party season, and having a go-to recipe in your back pocket will make your life much easier. Whenever I am invited to a gathering, I always offer to bring my easy-to-make bruschetta. With only a few ingredients and about 5 minutes of prep time, you are ready to go with a simple and elegant recipe that is sure to impress everyone.
8-10 Roma Tomatoes
1/4 Red Onion
5-8 Basil Leaves
Salt and Pepper
Baguette or Toast Squares
Cut up tomatoes and red onion into small, bite-size pieces. Roll up basil leaves and cut into thin strips. Mix all together in a bowl. Add salt and pepper to taste. Pour about 1-2 tablespoons of olive oil and 1 tablespoon of balsamic vinegar on tomato mixture. Gently toss. Serve on toasted baguette or you can be lazy like me and purchase tiny toast squares (usually in the cheese case).
**You can store in the refrigerator or serve immediately. I prefer to let the mixture sit for a few hours so all of the flavors blend and mix together. I will add more fresh basil when ready to serve.
