One of my favorite vegetables in the summer is corn! It is so crisp and refreshing and perfectly sweet. This corn salad is SO easy to make and it’s perfect for summer BBQs because you can make it in advance and easily double or triple the recipe.
5-6 cobs of corn
1/2 cup of chopped cherry tomatoes
1 can black beans
1/2 white onion, chopped
Juice of 1 lime
Salt and Pepper to taste
Rub corn with olive oil and heat up grill or skillet on medium high heat. Grill corn cobs of corn and make sure to rotate every few minutes. Let corn cool a bit and use butter knife to cut corn off the cob. Cut up avocado, tomatoes, and white onion. Combine all ingredients in a large bowl and stir until mixed. This tastes delicious after letting it chill in the fridge and even better the next day!
