When it comes to beating the heat in the summer, nothing makes me happier than a cold drink or a popsicle. It occurred to me that I could combine the two, right? I made this refreshing tequila sunrise popsicle (well, it kind of looks like a slushie) to try out my new popsicle molds and to have a little fun this past weekend.
So this was my first try, and obviously I added too much alcohol (oops) so the popsicles didn’t freeze completely solid. But thats alright, because I just popped it in a glass, added a straw and got to eating! I’ve adjusted the recipe to for less alcohol so it will actually freeze all the way, but if you want to add more, I won’t judge!
1/2 cup of Tequila of choice (I used blanco tequila)
1/2 cup Fresh Pineapple Puree
1 cup Pineapple Juice
Juice of 1 Lime
*Makes 6 popsicles
To make pineapple puree, simply cut up half a pineapple, add to blender, and blend until smooth (about 10 seconds). Next, combine tequila, pineapple puree, pineapple juice, and lime juice into pitcher (I recommend mixing the liquid in a pitcher with a pouring spout to make it easier to transfer into popsicle molds). Pour mixture into popsicle molds leaving about 1/4 inch. Top off each popsicle with grenadine until full. Put on popsicle stick top and stick in freezer for 4-6 hours. If you want a more divided color with the red and yellow, pour in grenadine first and pineapple mixture after. Enjoy!!
PS – If the popsicles still don’t freeze complete, just put in a glass! I think you could even add some sparkling wine or seltzer for some bubbly fun (I can’t resist bubbles!).
